Process

Cherries are collected and hand sorted before being depulped. The coffee then undergoes a 24-hour traditional fermentation, followed by a second 48-hour anaerobic fermentation. Next, it is washed and dried on shaded raised beds for approximately 20 days.

Dwight’s Red Gesha is a remarkably floral and transparent coffee, with aromatics of bergamot, jasmine, and apple blossom. Its texture is juicy and delicate, with a light structure that lets the fruit and floral character take center stage. Fresh mango and white grape carry through the cup, while the acidity becomes more pronounced as the coffee cools, bringing notes of lemon and grapefruit alongside honeydew melon and Bing cherry.

This is an exceptionally complete coffee, with the kind of clarity and depth we rarely encounter. It reminded us of some of the best Panamanian Geshas we’ve tasted, while offering a distinct expression of its Peruvian origin. We recommend giving this coffee plenty of rest after roasting. As a lighter roast, it takes time to open up and reveal its full range of flavor.

Dwight Aguilar Masias grew up in coffee in Peru’s Quillabamba region and has spent his career pushing himself to understand what’s possible. Early in his journey, he traveled to Villa Rica, a hub for coffee quality in Peru, where he learned new cultivation techniques and began working with varieties including Gesha and Bourbon selections.

Since then, Dwight has continued investing in his farm, refining cultivation and processing with each harvest. His dedication has earned remarkable recognition: he won Peru’s Cup of Excellence in both 2018 and 2021, placing first among an exceptional field of producers. His coffees have since drawn the attention of roasters around the world.

We were introduced to several of Dwight’s selections while tasting coffees in Quillabamba this year. His Red Gesha immediately stood out, and we committed to purchasing it on the spot. Coffees like this are a rare expression of the producer, the variety, the place, and the care behind them.
