As far as we're aware, no producer has ever created a Zero Fermentation coffee of this quality, and tasting it alongside an Anaerobic Hybrid Washed version serves as a reminder that many of coffee's supposed rules are simply inherited assumptions.
Processor Tamiru Tadesse challenges those assumptions, not for the sake of novelty, but in pursuit of a question that has guided Alo Coffee from the very beginning:

Ethiopia Alo Fermentation Study
Experience two distinct expressions of the same remarkable Ethiopian coffee from producer Tamiru Tadesse of Alo Coffee in Sidama. Taste them side by side and discover how processing alone can shape two completely different coffee experiences, all from the same producer, harvest, and terroir.
Alo Anaerobic Hybrid Washed
A carefully controlled 72-hour anaerobic fermentation followed by washing creates a vibrant, fruit-forward cup with notes of white grape, peach, ripe berries, honeydew, and lemon citrus. Juicy, playful, and layered.
Alo Zero Fermentation Washed
After depulping, the coffee skips fermentation entirely and is washed immediately before drying. The result is a remarkably transparent cup with bergamot, jasmine, key lime, white tea, apricot, and mint. Floral, elegant, and strikingly precise.
This is a very small lot of coffee and is only roasted once per week. First roast date: 7/13/2026.

Coffee cherries are sorted for uniform ripeness and floated to remove low density cherries. The cherries are then immediately depulped, removing all mucilage and then dried on raised beds for 3 days before moving to sealed bags for "resting." After resting in sealed bags for 3 days it is moved to raised beds to dry slowly in the sun for another several days depending on climate conditions. |

Cherries are hand sorted for optimal ripeness before undergoing a 72-hour anaerobic fermentation in sealed containers. After fermentation, the cherries are depulped, washed, and dried on raised beds for 12–15 days. |

Redefining Ethiopia Coffees
Tamiru's coffees have continued to define the highest levels of quality found in Ethiopia. He remains singularly focused on quality. It's no secret that Tamiru's coffees are both extremely limited in quantity and highly sought after. Wonderstate was the first roaster in the United States to purchase coffee from Alo Coffee, and that first interaction has grown into an ongoing partnership. Today, we're fortunate to continue featuring some of Tamiru's rarest and most volume-constrained coffees on our menu.
