About the Producer
We love keeping a single origin decaf coffee on our menu as the global harvests ebb and flow. It gives decaf lovers an opportunity to enjoy the nuances and unique flavor profiles of a given region. This coffee comes to us from Café Orgánico Marcala (COMSA), a cooperative based in the famed coffee producing region of Marcala, Honduras.
Founded in 2001, what began as a cooperative of 69 coffee farmers in La Paz, COMSA’s membership has swelled to more than 850 producers. At the heart of COMSA is a commitment to organic farming. An incredible example of stewardship, COMSA’s farmers are dedicated to cultivating and naturally enriching their soils to create a vibrant and resilient farming landscape. This dedication to the land is in service to the organization’s holistic vision to support the well-being of its members and their families.
A leader among its peers, COMSA has proven that an economically sustainable cooperative model can also be recognized for its quality, transparency, commitment to gender equity, and innovative agricultural practices. COMSA has made a thriving future in coffee possible not only for their community, but for the many others following their lead.
About the Coffee
Decaffeinated with the celebrated "Mountain Water Process" (MWP), Organic Decaf Honduras retains its unique flavor profile without compromises. Unlike many decafs on the market that use chemicals in this process, MWP gently removes caffeine in a pure water solution that floats coffee oils to the surface (caffeine included), filters out the caffeine, and reintroduces the original oils to the green coffee, preserving the distinctive character of the coffee. The result is a great coffee, no qualifiers.
Why we love it
In specialty coffee, using the word “decaf” can often solicit a groan. Assumed to be flat, flavorless, and indistinct, decaf coffee gets a bad wrap. But our decaf coffees tell a different story. This coffee is carefully roasted to a perfectly balanced medium roast depth. This approach to this coffee, softens the brighter flavors into a delicious marriage of pure, maple goodness along with a deep, milk chocolatey body. The end result is one of the sweetest decaf coffees that you will ever find. Enjoy!
