About the Farmer

Wilson Alva is a seasoned coffee farmer who has recently embarked on his specialty coffee journey. Sierra Morena, the farm he now owns, was previously managed by his grandfather and father, with whom he worked closely. In 2003, Wilson and his family decided to shift away from coffee to focus exclusively on cultivating fruits. Upon his father’s retirement, Wilson inherited the fruit farm. Not long after, he learned about farmers in the area receiving premium prices for specialty coffee. Inspired, he replanted coffee trees and focused on a new variety in the area: Pink Bourbon.

Today, Sierra Morena has fully returned to coffee production, with a near-exclusive focus on Pink Bourbon, though Wilson has begun experimenting with other exotic varieties. Initially, he struggled to meet the quality standards required for high-value markets, but through perseverance and improvement, he now produces some truly exceptional coffee.

About the Coffee

We’ve always been avid fans of Colombian coffee. Colombia, in many ways, is the land of flavor possibilities. With its many producing regions, each offering unique micro-climates, the country produces coffees of remarkable distinction. In recent years, we’ve witnessed an explosion of new coffee varieties in Colombia, leading to familiar regions yielding completely new flavor profiles—some with the exotic qualities often associated with Ethiopian coffees.

A significant contributor to this change is the Pink Bourbon variety. This type of tree emerged a few years ago and has since gained immense popularity, with producers across nearly every region beginning to cultivate it. In the cup, Pink Bourbon delivers explosive flavors, characterized by intense citrus and jammy fruit notes. We love these coffees because they’re a bit wild and unpredictable—each sip reveals new layers of complexity. We invite you to try something unexpected and delightfully unconventional.

We’ve discovered that some of the finest Pink Bourbons come from the Huila department, a region long celebrated for its phenomenal coffees. Sierra Morena marks our second-ever Pink Bourbon release, and we’re thrilled to share it with you. This coffee will astonish you with its abundance of pure fruity goodness in every drop.

Sierra Morena farm is located near the small town of Palestina, a municipality in the southernmost corner of the Huila department. This area is the geographical base of the Macizo Colombiano, or the Colombian Massif, which splits into three distinct mountain ranges as they extend northward. It is in this rich environment that Wilson cultivates primarily the Pink Bourbon variety, at an altitude of 1,850 meters above sea level. This coffee undergoes a mixed fermentation process, with cherries held for about 18 hours before being de-pulped and dry fermented for 48 hours. The seeds are then washed and dried on raised beds to achieve optimal moisture levels.
