What We Love
Our ongoing exploration of Colombian coffee brings us back to Nariño, where we find some of the country’s most captivating flavors. This natural-processed coffee from Finca Toldopamba immediately sparked our curiosity and imagination. It offers a stunning interplay of juicy fruit tones and rich chocolate depth, creating a beautifully balanced cup.
Expect vibrant red fruits such as maraschino cherry and strawberry up front, followed by a bright, citrusy acidity reminiscent of blood orange. A long, syrupy chocolate finish completes the experience, making each sip as intriguing as the last.
About the Producer
Nestled at Colombia’s southern tip along the Ecuadorian border, Nariño is renowned for its high-altitude coffee farms and optimal growing conditions. For decades, however, violence and instability forced many farmers to abandon their land. Only in recent years have families begun rebuilding their farms and unlocking the region’s full coffee potential as peace has slowly returned.
Sourcing coffee from Nariño remains a challenge. Farms are small—often just one to two acres—and transportation is difficult due to poor infrastructure. Yet, despite these obstacles, organizations like Toldopamba are forging a path forward.
Established by Angela Patino Findlay and Carlos Burbano, Toldopamba is a family farm and a key exporter supporting smallholder farmers. Carlos’ grandfather, Noe Burbano, was forced to abandon Toldopamba in the 1990s due to violence. Years later, Carlos returned with a vision—to revive his family’s farm and help other growers succeed. Today, Toldopamba provides technical support, logistical assistance, and market access to roasters who share its values of sustainability and quality.
While we continue working with Toldopamba to showcase Nariño’s smallholder producers, this year, we had the rare opportunity to feature a coffee from their farm. Crafted exclusively for Wonderstate, this lot highlights the exacting commitment to excellence that defines Toldopamba.
About the Coffee
In 2023, during our visit to Colombia, we cupped coffees alongside Carlos and Angela, seeking the most expressive profiles Nariño has to offer. One sample stood out—a natural-processed coffee that was remarkably clean, vibrant, and fruit-forward.
At Wonderstate, we’re selective about natural coffees. While they can sometimes lean too fermented, winey, or nutty, this selection was crisp, structured, and brilliantly fruity—everything we look for in a top-tier natural.
To create this coffee, Carlos and Angela sourced ripe cherries from Finca Toldopamba and nearby farmers. They washed the cherries and used an electronic color sorter to remove underripe ones. The coffee was then dried on shaded raised beds for over 30 days, ensuring precise moisture control and flavor clarity.
The result? A coffee that thrills the palate, bursting with notes of maraschino cherries, strawberries, blood orange, and rich chocolate. It’s playful, expressive, and a testament to the singular magic of Nariño.
