Colombia is a diverse paradise for coffee enthusiasts, which is why we often have a few on our menu during peak season. But no Colombian coffee has hit our roaster more frequently of late than Finca Costa Rica Pink Bourbon. This is thanks to the unique geography of the country, which is divided into wildly unique microclimates by the Colombian Andes — some of which are able to harvest multiple times in a year, as is the case with Finca Costa Rica. So no, your eyes don't deceive you, when you see this coffee on our menu it's fresh, and it's very, very good.
Finca Costa Rica is found in Huila, a department in southeast Colombia celebrated for its highly aromatic and fruit-forward coffees. Recently, we started sourcing coffee from Huila and were introduced to Faver Ninco, a farmer whose exceptional work on his farm, Finca Costa Rica, has continually challenged our perceptions of Colombian coffee. This 100% Pink Bourbon selection is an absolute standout and is particularly special because it exemplifies the three critical factors that shape the flavors in your cup: place, process, and variety.
Place: Elevation and Soil at Finca Costa Rica
Faver’s farm is located at one of the highest elevations in the Santa Maria community. This high-altitude setting allows the coffee to ripen slowly, absorbing more nutrients from the fertile soil. The result is a cup of coffee that is smoother, sweeter, and denser in flavor.
Process: Innovative Fermentation Techniques
Faver is a pioneer in his community, utilizing advanced processing methods to enhance his coffee’s flavor. He combines anaerobic fermentation with traditional washing, adding layers of fruitiness and floral aromas that set his coffee apart.
Variety: The Unique Pink Bourbon
Faver cultivates several new coffee varieties, each with distinct and fruity flavors. The Pink Bourbon variety, with genetic links to Ethiopian coffee trees, stands out amongst the typical varieties. It offers vibrant citrus, stone fruit, and tropical fruit notes, especially when compared to more common Colombian coffee varieties such as Castillo.
The synergy of these three elements—place, process, and variety—creates a spectrum of spectacular flavors.
