Though he has not yet achieved his lifelong ambition of being the frontman of a T-Rex cover band, Luke Brekke enjoys living anyway. Wonderstate Coffee’s most veteran staffer, Luke sticks around because whatever he's doing--whether roasting, bagging coffee, or working on the big picture stuff--being at Wonderstate rarely feels like work. Of course, access to good coffee doesn't hurt either. Luke is a sucker for coffees from Kenya but is always on the lookout for those occasional knock-out lots from Honduras. He lives in La Crosse with his two daughters.
General Manager of Cafes
On a mission to show her family small community living and giving them the chance to grow up knowing where their food comes from, Bobbi Griffin uprooted her husband, Chad, and two children, Lotus and Dashiell, from south Minneapolis to the Driftless area. In addition to taking advantage of all of the outdoor activities that southern WI has to offer, she enjoys gardening, cooking, yoga and has a love for mid-century design. It didn't take long for her passion of sustainable farming practices to include coffee. Bobbi joined the Wonderstate family by managing their Viroqua cafe and quickly earning her SCA Barista level 2 certification.
Heather Marx holds a degree in accounting from Franklin University and has been working in the field for more than a decade. She has lived in Viroqua for most of her life and loves spending time with her husband and three children, enjoying the outdoors and reading. She joined the Wonderstate team in 2017 and quickly learned how to make one heckuva pourover. As Heather likes to say, “accounting is the heart of an organization,” and since having her in this role, we definitely agree.
For most of his adult life, Caleb Nicholes has been a professional gourmand, including three years as an importer of boutique European wines and nine years as a coffee roaster. His work in the wine industry took him all over France, Italy, and Spain where he learned that "if you run fast enough, you don't actually run with the bulls." Caleb spends his weekends outdoors fly fishing and frolicking in the Driftless with his four kids.
Sales Support Coordinator
With Carolina roots, and New York limbs, Kaleigh Novak made the move to Wisconsin in 2012. After just one visit to our incredible state she knew this was the place she wanted to call home. Kaleigh and her husband live on a hobby farm and you can often find her practicing yoga, fishing or hiking. But her favorite hobby of all time is just hanging out at home with plenty of snacks and her two hounds. After many years in the veterinary field, Kaleigh is beyond thrilled to be a part of the Wonderstate Coffee team!
Production & Order Fulfillment Coordinator
Born and raised in Viroqua, Bailey Rehbein feels like she's joined her hometown team at Wonderstate Coffee. But before landing in the specialty coffee world, Bailey took her Food Science degree and love of Pinot Noir to Oregon, where she made wine in the Willamette Valley. Later returning to the Midwest, Bailey managed a small, family owned meat shop in northern WI. Being a skilled butcher, she loves getting her hands dirty and is always up to help out a friend with a project. Most nights over 40 degrees, you can find Bailey out by the grill with an Old Milwaukee beer and her pup .
Culinary Program Manager & Viroqua Cafe Co-Owner
Allison Sandbeck joined the team to jump into production and get her hands on the roaster. After a lifetime of working in commercial kitchens, catering, cooking and baking, Allison decided to switch things up and learn the art of coffee. She's a New Yorker born and raised but has worn many hats and called many places home. Viroqua has provided a beautiful landscape to raise her four children, practice being athletic and literally fiddle around. Today, you’ll find her managing our new cafe in Viroqua, serving up the perfect hometown experience.
Co-owner & President
TJ Semanchin found his way to coffee in 1999 after working and traveling in Latin America, focusing on sustainable development. Convinced that fair trade, organic coffee was the best bet for farmers in Latin America, TJ returned to the States and has been involved in the coffee industry working for social change ever since. He is married with two children and likes to hit the trail on his mountain bike or x-country skis depending on the season.
Before Jay Skrede joined the production team, he braved teaching middle schoolers for a decade and then worked in the food industry as a sales representative for nearly as long. When Jay isn't pulling espresso shots at home, you can find him on two wheels. Whether it be road, mountain or his favorite, cyclocross, Jay loves cycling around Vernon County, Wis. - a place his family has called home for four generations.
Jackie Sobolewski has been working with organic produce for her entire adult life, either on organic farms or at the Willy Street Co-op in Madison. She is excited to have moved into the coffee industry and to learn more about all things coffee and coffee roasting. Jackie enjoys traveling all over the world (especially by bike) and loves visiting farms along the way. Here in Wisconsin, you can find her riding her bike on the hilly roads, hiking, paddling, cross country skiing and anything that gets her outside year-round.
Outreach & Events Manager
Havvah Spicer's love of food and fine beverages was nurtured from a young age and has continued throughout her career in the foodservice industry. Paired with her passion for collaborative work and personal connection, Havvah is right at home as Wonderstate Coffee's Outreach & Event's Manager. Havvah is also a yoga instructor, dancer and mother of two beautiful children. You can always find her in an kaleidoscopic outfit, most likely a vintage sundress.
Interim Brand & Marketing Manager
You won’t find Justin Sprecher sitting still. More likely he’ll be backpacking, canoeing, cycling or cross country skiing. Having spent much of his adult life moving between states and countries he is excited to return home to southern Wisconsin. Coming to coffee from a background in videography, marketing and organic farming, Justin is passionate about sustainable food systems and eager to spread the mission of Wonderstate and foster meaningful relationships with our customers.
Milwaukee Cafe Co-owner & Manager
Scott Lucey has been a barista since 2002 and enjoys so much about working with coffee. He's been a leading member of the Specialty Coffee Association, most specifically with the Barista Guild of America (BGA). He served on the BGA's executive council for 7 years to help develop the extensive educational program that exists today as well as Barista Camp--both of which serve as milestones in many baristas’ careers. Scott has also been a barista competitor for numerous years, winning the 2009 Great Lakes Regional and that same year placing 3rd in the United States Barista Competition. Having a cafe of his own has long been a dream for Scott, and today you can find him in our Milwaukee cafe happily steering the ship.
